Soup #2 Celery Root

This is a celery root. It looks ugly, but it's delicious. Don't be intimidated by it - treat it like a potato or root vegetable....

Soup #2: Celery Root with Green Apple and Bacon

This soup is SLAMMIN'!!!! So f*ing delicious! Not vegetarian like most of my soups, but still healthier than most soups you'd get in a restaurant. Alot of people are intimidated by celery root- but don't be alarmed...just approach it like a potato or root vegetable.

Ingredients:
2 celery roots
3 pieces of bacon
2 leeks (all but the tips)
2 granny smith apples
1 potato
3 cups of chicken stock
1/2 cup of milk
Salt and pepper

Instructions:
1. Cook the bacon til crispy, and reserve the fat
2. Sliced the leeks
3. Pour the bacon fat into the soup pot, and sautee the leeks over medium heat until they are soft
4. Peel and core both apples, dice and throw into pot.
5. Crumble up bacon and throw that in too.
6. Peel your celery root, and dice. Add to the soup pot.
7. Pour in 3 cups of stock and your milk. A sprinkling of salt and pepper. Bring to a boil and then turn down to simmer for about 30minutes.
8. Purée in batches (in food processor), put back in pot, and then Simmer for about an hour.

Soup takes hours for the flavors to marry and come together-- so soup ALWAYS tastes best the NEXT day. So try to be patient! Garnish this soup with julienned celery, apple and crumbles of bacon!
