Lemons, Blueberries and Friends.

Dinner Party #583.

Gray, Erin and I had breakfast at my place...green eggs, french toast, fresh fruit. MmMm. Then we set off for the Farmers Market right here in Leucadia. Got some goodies and decided to make dinner at Grays house later that day. I whipped us up some Lemon Linguini and a Blueberry Salad. So simple, so delicious.

Here are the recipes...

Lemon Linguini

Ingredients:
  • Linguini
  • EV.Olive Oil
  • Fresh FLAT LEAF Parsley
  • Parmesan Cheese
  • Course Ground Salt
  • Fresh Ground Pepper
  • Lemon

Cook the pasta. Dress with a good amount of EVOO, juice of a whole lemon. Toss in a large handful of fresh parsley and a nice bit of parmesan cheese. Grind some pepper on top and toss in some chunks of salt. Garnish with a lemon wedge. If you'd like you can sprinkle on some crushed red pepper for some pizazz!

Blueberry Salad


Ingredients:
  • Mixed Greens
  • Salt + Pepp
  • Honey
  • Roasted Pecans or Walnuts {if you'd like you can roast raw nuts in the oven with some butter for about 15minutes @ 400 degrees}
  • Cheese {Goat Cheese or a Stiton...I used a Blueberry Stiton!}
  • Balsamic Reduction {to make this you put a cup of balsamic vinegar in a sauce pan on a medium heat. Let it cook down a little more than half way until its syrupy. You can also buy this premade at the supermarket}
  • Fresh Blueberries
  • Fresh Mint

To begin take a nice handful of fresh mint and mix it into the mixed greens, so that it's acting as a lettuce almost. Top the mixed greens with fresh blueberries, roasted nuts and crumbled cheese. Drizzle with the balsamic reduction and a little bit of honey. Dash of salt, a grind of fresh pepper. If you'd like, right before you serve the salad throw some fresh blueberries in a skillet with some honey, let them cook down a bit and then toss them on the salad. TaDah!
